As the Food & Beverage Manager, you are the driving force behind exceptional dining experiences and outstanding service. You lead and inspire the Food & Beverage team to deliver memorable moments across our restaurants, bars, banquets, and special events. By combining operational excellence with a passion for hospitality, you ensure that every outlet operates efficiently, meets the highest quality standards, and exceeds guest expectations. Your leadership, commercial acumen, and commitment to innovation help maximise revenue, develop your team, and create a vibrant dining experience that reflects the unique spirit and service culture of The Ravenala Attitude.
What Your Days Will Look Like
- Lead, coach, and motivate the Food & Beverage team to deliver exceptional guest experiences across all restaurants, bars, banquet operations, and special events.
- Plan, organize, and oversee the daily operations of all Food & Beverage outlets and banquet functions, ensuring seamless execution, service excellence, and operational efficiency.
- Manage and coordinate banquets, conferences, weddings, and other large-scale events, working closely with the Kitchen, Sales, and Events teams to ensure every function is executed to the highest standard.
- Monitor guest satisfaction, handle feedback and complaints professionally, and implement improvements to continuously enhance the guest experience.
- Collaborate with the Executive Chef to develop innovative menus, banquet packages, promotions, and seasonal offerings that align with guest preferences and business objectives.
- Ensure compliance with food safety, hygiene, health and safety, and company standards across all Food & Beverage outlets and banquet operations.
- Monitor and control departmental budgets, labour costs, food and beverage costs, banquet profitability, and operating expenses to achieve financial targets.
- Analyse sales performance, banquet revenue, and operational reports, implementing strategies to maximise revenue and profitability.
- Manage inventory levels, purchasing, and stock control to minimise waste and ensure product availability.
- Recruit, train, develop, and conduct performance evaluations for team members, fostering a culture of engagement and continuous improvement.
- Coordinate with other hotel departments to ensure seamless service delivery for guests, conferences, weddings, banquets, and special events.
- Ensure all Food & Beverage outlets and banquet venues are maintained to the highest standards of cleanliness, presentation, and brand image.
- Stay informed of industry trends and introduce innovative concepts and best practices to enhance the hotel's Food & Beverage offering.
- Lead by example, promoting a culture of teamwork, professionalism, and exceptional hospitality while ensuring departmental objectives are achieved.
You Might Be a Great Fit If…
- Diploma or Degree in Hospitality Management, Hotel Management, Food & Beverage Management, or a related field.
- Minimum of 5 years' experience in Food & Beverage operations, including at least 2 years in a managerial role within a hotel or resort. Proven experience in managing banquet operations, conferences, weddings, and large-scale events is essential.
- Strong knowledge of Food & Beverage operations, cost control, budgeting, inventory management, food safety standards, and Microsoft Office applications.
- An inspiring and hands-on leader with excellent people management, coaching, and team development skills.
- Able to motivate teams to consistently deliver outstanding service.
- Guest-focused, commercially minded, and results-driven with excellent communication, organisational, and problem-solving skills.
- Calm under pressure, adaptable, and passionate about creating exceptional dining experiences while driving operational excellence and profitability.
